The ribs and whatnot I've had in Memphis came dry rubbed and hickory smoked, with sauce added after if you like them "wet." I believe these are basted with a vinegar mix, but IMO you really can't taste the vinegar--not like a North Carolina sauce. I understand that a lot of people eat them dry, with no sauce at all.

Full disclosure: I personally prefer a vinegary sauce, mostly because I am not big on sweet things with meat.

Mild confession... I have never been to Memphis, but at the same time vinegar based sauces are outside my comfort zone.

I am a senior lecturer at the University of Adelaide, South Australia, and have been trying to raise awareness and interest in the concept of “graduation with civic honours” locally and nationally. Last year I presented a concept proposal presentation at the National Conference on Volunteering. The proposal was well received and has been the impetus to make contact with other tertiary institutions around Australia where similar (and different) volunteering schemes are in place. I note your contributions in the area of civic honours (I own your book)and would like to establish contact and dialogue with yourself and others you might direct me to.

Currently I thinking about visiting a select number of institutions in the USA who run these programs for further research and scoping of the idea. This knowledge may indeed translate into a strategy for trying to develop programs here in Australia.

I look forward to your reply,
Jeff Trahair PhD

Thanks Mykle! A trip to visit Slayton's Tejon Street Grill has now been completed. The burnt ends were fantastic. Joni and I decided on ordering the, “Barbecue Combo Platter: Smoked brisket, pulled pork, beef and pork burnt ends served with french fries and Hickory Pit Beans.” At the end of the meal it seemed only prudent to order an additional pound of burnt ends for later.
